Job Title:                              Baker

Department:                       Any Production Department

Reports to:                          Pastry and Gluten Free Supervisor

MINIMUM SKILLS & QUALIFICATIONS

  • Food Safe Level 1
  • Hep A vaccination
  • Ability to communicate effectively in English
  • Must have the ability to be on feet for extended periods of time
  • Must have the ability to lift up to 50 lbs.

JOB SUMMARY

The job of Baker will be to support the Department Lead in all areas of production. These areas include, but are not limited to:

 

*      Ability to perform all aspects of the job and work in any area of the department

*      Displays accuracy when calculating numbers for dough sizes and the days production

*      Responsible for the mixing process

*      Demonstrates accuracy in all aspects of the production including but not limited to: scaling, mixing, recording production, etc.

*      Follow the specified production lists for each day and when unsure, follow up with Supervisor/Manager

*      Accurately follow written recipes in metric units for scaling various products

*      Follow and complete the cleaning and sanitation checklists

*      Follow and record all production made on the appropriate forms

*      This job also entails housekeeping duties including but not limited to: stocking ingredients, washing and sanitizing all equipment, tools and, workspaces as well as ensuring all equipment is turned off and locked out for the next day

*      Complete all paperwork associated with the department

*      Uphold ambitious standards for productivity while maintaining quality standards

*      Flexibility to work in any area of the department (and bakery)

*      Understand how the whole bakery runs and where your department fits into that

 

HEALTH AND SAFETY REQUIREMENT

*      Must follow all department procedures as laid out in the Pastry Training Manual

*      Employee must follow direction of immediate supervisor and department leads

*      Employee must follow company policy regarding food safety rules including but not limited to: wearing proper uniform, hairnet, beard nets and shoes, following the company Jewelry Policy by taking it off or taping it up.

*      Must follow company’s personal hygiene policy and show up for work showered, with clean trimmed nails, ready to work

*      Employee must wash and sanitize hands properly. Fingernails must be kept clean and trimmed, nail polish and false nails are strictly forbidden.

*      Employee must follow company procedures regarding the proper use of gloves. Gloves must be changed between tasks and when they become damaged or soiled

*      Employee must follow company policy regarding proper use of the punch clock. Employees must not punch in until fully dressed and ready to work and must punch out immediately at the end of shift

*      Employee must follow company policy about keeping garbage and plastic separate

*      Employee will be trained as follows and must follow company policy regarding the production of food items and the proper use of equipment:

  • How to prepare all production products including processing mixes, and equipment required
  • Product quality and sanitization
  • How to safely use all equipment
  • *      Critical Control Points of bleach and baking

    *      Must complete company forms accurately and neatly as per policies

    *      Must report any issues regarding quality, equipment, stock, low goods, and/or packaging to management

    *      Must hold Quality Control as a top priority and any issues regarding quality control must be brought to management’s attention immediately

    *      Must follow FIFO standard (First in First out). This refers to all ingredients, stock, and products.

    *      Do not use equipment until you have been thoroughly and properly trained to do so

    *      Follow all WHMIS procedures
